Focus of the dinner was for Janet C to backward engineer Rinconcito's aji. I made a batch of my version, which all thought good, but not exactly the same. Maria K, who is a South American cookbook author of some note, thought Rinconcito's version contained a little cumin and oregano. She also suggested roasting the peppers and using some Serrano pepper, in addition to the jalapeno.
